That said, if you absolutely must have french fries, have baked fries instead of those that are fried. Create 1/2″ wedges or fries and toss them with a tablespoon of oil, a bit of salt and pepper, and your favorite herbs. Spread them out on a baking sheet, and pop in a 400 degree oven for a half hour. Use a spatula to loosen any caked-on fries, turn them over, then bake them for another half hour. These fries are great with catsup and contain far fewer calories than their deep-fried counterparts.
